Ancho Marmalade Glazed Ribs

With just a few ingredients and a little bit of time, you can create some mouth watering ribs
Here is what you will need. Remember this is just a guidepost, you flavor and season to your taste
Ingredients
2- Racks of ribs whatever style you prefer
3 tbsp- Orange Marmalade
4-5- dry ancho pepper pods
2-3 tsp of dry ancho powder
2-3 tsp of dry cumin powder
32 oz- chicken stock
1-stick of butter
2-3 tsp of dried minced garlic
1- heaping helping of your favorite rub
1- jar of mustard mustard (binder)
salt and pepper to taste
prep
slather mustard on both sides of ribs ensuring all surface area is covered add rub to both sides liberally
in a sauce pan toast cumin, garlic and ancho powder until it becomes fragrant
add chicken stock and pepper pods (remove stem and seeds)
boil for 10-20 minutes the longer its boiled the more intense the flavor
remove from heat allow to cool slightly
pour liquid into a blender and add 3 tbsp of orange marmalade blend well
ribs will be cooked with the 3-2-1 method @ 250-275 degrees 3 hours on the smoker wrap for 2 hrs with butter and a drizzle of the glaze and 1 hr unwrapped liberally applying the glaze over the ribs. the last hour is just so the glaze sets up on the ribs.
so it might not take the full hour.
