Lime-Olive Oil Slaw
Sometimes simplicity is the best way to go. Being as I am not a huge fan of the mayo-based coleslaw, I wanted to make something that provided a bit of a wow factor to serve on the side of any BBQ dish I prepared. This little side dish really fit the bill. The great thing is it takes very few ingredients and very little time to prepare and it brings a freshness to any entre.
Ingredients
1 bag of premade slaw mix (cabbage and carrots)
3-4 medium sized limes
¼ cup of olive oil
Salt
Pepper
Zest limes and cut them in half
Put the cabbage mix in a mixing bowl
Squeeze limes over the slaw mix
Add oil and mix well
Top with lime zest
Salt and pepper to taste
Chill and serve when you get that meat rested up
