Smoked Glazed Pork Belly

This is one of those cooks that requires very few ingredients and just a little time. This meat pairs well with many side dishes.
We will be serving ours with a slaw topped with a olive oil, lime juice vinaigrette and some scalloped potatoes.
Don’t be afraid to step out of your comfort zone when choosing what meats you want to smoke. It’s how you learn new techniques and most of all discover some new favorites. This is how we came to smoke pork belly. It’s a simple meat to smoke but you will be amazed at the amount of flavor you get. The fat in the pork belly should melt in your mouth if done right.
Ingredients
Mustard to use as a binder
1/2 cup of brown sugar
Generous amount of your favorite rub
Your favorite bbq sauce
Prepare smoker with your favorite wood
Score fat side of pork belly in equal size squares just to the depth of the fat cap. This will allow the rub to penetrate into the meat. Slather both sides of the pork belly with mustard coating well .
Mix your rub with the brown sugar and generously rub both sides of your pork belly. Reserve some of this mixture for 2nd stage of this cooking method .
Place pork belly fat side up and smoke for Approximately 2-1/2 - 3 hours or until you reach 165 degree internal temperature
Take the pork belly off of the smoker sprinkle remaining rub over the top of the pork belly and wrap in aluminum foil.
Return meat to smoker and grill until you reach around 200 degree internal temperature.
Loosen foil and glaze the fat side of the pork belly with your favorite sauce. Sprinkle with a little brown sugar for a perfect caramelized pork belly.
Return to smoker uncovered ad grill until sauce is set on the pork belly. Depending on how hot the grill is will determine how long this will take. Estimate 10-20 minutes.
Now for the fun part. Remove the pork belly from the grill and wait, let the meat rest for 20-30 minutes. The results will be the most unctuous piece of meat you’ll ever eat. I promise. You’ll be making this again I guarantee it.
